Rockn' out
Here's some coooool news and some crappy news. The COOL news is that we have had a lot of snow and it's a winter wonderland around here. The crappy news is...that all this snow is keeping us from going home for Thanksgiving:(
We are so bummed about it! We were really looking forward to going home to spend Thanksgiving with our family. We have been going back and forth on what we should do for 2 days while constantly checking the road reports, we finally decided today at 12:00 that we shouldn't go. Typically we would not let a snow storm deter us from making a trip but when all 3 states that you have to travel through have ice packed roads....that makes an already long trip super long. That bites!
Now Brock and I are going to have our "first Thanksgiving" together....it will probably be super lame. I'm just thankful that we have a warm and cozy house to spend it in!
Since there is not a lot going on right now and I am stranded at home (that's another looooong story) I thought I would do my next about me post. Here it is:)
#21: Your favorite television program
This is a hard one because I have a few favorites but I can totally say that the show I look forward to watch every week is 30 Rock.
I wasn't a huge fan of it in the beginning but I really like it now. Brock and I both think it is so hilarious.

About me #20
# 20: A letter to someone that changed your life
I have a lot of people in my life who have influenced me and changed me for the better. I also have many people who I will never forget because of their kindness to me. I should really make a list and write each person a note to tell them what they mean to me....there's another goal for someday.
The person who has changed my life the most is my sweet husband, Brock. He is seriously the best human I know or have ever known. He is my absolute favorite person ever! I love him to pieces and we have so much fun together. I know that this probably sounds really cheesy but it's true even if it is cheesy!
So my letter is to Brock but it is waaaaay too personal to post on my blog so I will hand-write him a note and deliver it personally.

About me #18
# 18: Set or share a goal
Honestly, I'm horrible at meeting long term goals. Usually they are things that are not very realistic to meet and/or I forget about them. I am much better a very short term goals; you know things that I can accomplish in a couple hours or a few days.
Here's a goal I will set and share with you:
I will only wear my hair in a ponytail 3x's a week. (work days only).

To My Grandpa Ray
# 15: A letter to someone you wish you could meet
Dear Grandpa,
If I had a Genie, I would wish to spend a couple days with you. I would spend every minute trying to place every detail about you into my mind so that I could remember you exactly how you were. I would want to remember your clothes, your hair, your smile, your eyes, your laugh, your hands and even how you smelled.
We would talk about you most of the time. You would tell me about your childhood and I would learn things like: how your parents raised you, what you did for fun with your siblings, what you like to do, what made you nervous and what your dreams were.
Then you would tell me the story of meeting the love of your life, my beautiful and feisty Grandma. You would let me know about how it was love at first sight and that she made you really happy. Then you would tell me that I'm a lot like her.
I would ask you about my dad and you would tell me how much you love him and are proud of him and who he's become. We would laugh as you told me stories of him as a kid and the things he did that made you laugh and the things that he did that drove you nuts.
We would talk about all of your grandkids and great-grandkids and how you love each one of them for who they are individually. You would talk about each of their strengths and weaknesses and how this makes us all special to you. You would shed a tear over sorrow, loss, pain and disappoint that has come and gone through your posterity. Then you would express your love of family to me and assure me of your deep love for all of us still here with out you.
Lastly, you would express your love for the Savior to me and how you have come to know him. You would encourage me to always have faith in him and do my best to be like him. You would tell me to be kind to others and have a giving heart and love people no matter what.
Grandpa, the best part of our time together would be the time feeling your arms around me and feeling your love for me.
I know that perhaps now is not the time for us to meet but I know that someday we will and it will be wonderful.

#12: Self portrait
Yay! I'm excited about this post the last two were kinda boring, at least I thought so. Typically I wouldn't be one to take a self portrait, I'm just not that into myself but I did take a couple a while back that I will share.
Now, to appreciate these you have to understand the story behind it. Brock and I went out camping last year and while Brock was out gathering wood I decided to take some funny pictures of myself.
I had very specific looks I was going for in each shot. I think they turned out really great...they are some of my better pictures I think.
Caution: this could happen to you too if you get super bored:)
Enjoy....in a non-judgmental way! (plus they are super up close and personal...don't mind my imperfections and lack of make-up..geeesh, we were camping).

About Me #11
#11: Share your favorite recipe(s)
I'm excited about this entry! I love cooking and baking for the most part and I love sharing recipes. Here are a couple of my favorite recipes and the best thing about them is that they are easy!
Enjoy:)
Beef Enchiladas
1/2 lbs Ground Beef
1 Can Chili
1 Can Red Enchilada Sauce
1 Can Cream o' Chicken Soup
8oz. Can of tomato sauce
Cheddar Cheese
Black Olives
* Brown ground beef, once browned mix in chili. Spoon chili and meat mixture into tortilla shells and roll up.
*Mix soup, enchilada sauce and tomato sauce together and warm. Pour over tortillas and sprinkle with cheese.
*Optional: Chop olives and sprinkle on top.
I like to serve this with lettuce, sour cream, salsa and tortilla chips;)
Bake at 350* for 20 minutes
Raspberry Craisin Salad
Romaine Lettuce
Craisins
Swiss Cheese
1lb Bacon
Sunflower Seeds
Raspberry Vinaigrette
* Chop lettuce and cube cheese.
* Cook Bacon and crumble
* Mix all together and pour Vinaigrette over.
*Optional: can add sliced strawberries and slivered almonds.
Jello Cake
1 Box White Cake mix + ingredients
1 Box Strawberry Jello
1 Box Instant Vanilla Pudding
8oz. Cool Whip
*Bake cake according to directions-let cool. Poke holes all over cake with the end of a large mixing spoon.
*Cook Jello, using only the hot water. Pour Jello over entire surface of cake and let cool.
* Mix Pudding per instructions on box and let it set up.
*Once cake is cooled and pudding is set, spread pudding over top of cake. Then spread the cool whip on top.
*Keep in fridge until time to serve

About me is back...
My last "About Me" was posted before our Cancun trip and since then life has been soooo crazy that I haven't gotten back to it....until now....so here we go!
#10: A letter to a person who has caused you pain
Okay so this is kind of a weird one to do and I've been trying to decide to do it seriously or make it a joke. I decided to take the serious route.
I've been trying to think of a person who has caused me pain. Now because I believe I had a pretty "regular" childhood and I was at one point an emotional teen, I have dealt with a variety of what I thought was "pain" at the time. Which includes: being teased, picked on, left out, called names, gossiped about, laughed at and the list continues. I assume that most kids experience some of this at some point and that's just part of being a kid.
Now as an adult, I think of pain as something waaaay more intense than quarrels you have as kid over whose gets to "be the mom" when you play house. When I think of pain, I don't necessarily picture physical pain but rather emotional pain.
I have been blessed to be surrounded by many wonderful people including: obviously....Brock, my parents and Brock's parents, our families, friends and neighbors. All these people take great care of us and love us. I do however have one person who at one point was part of this list and it saddens me to have that person(s) out of my life. So this letter is to that person....
Dear Friend,
Looking back on our time together I have many great memories that we shared. We became friends quickly and I loved to be with you and your family. I respected your advice as you helped me set goals and pushed me to better my self. Because you were quite a bit older than I was you helped me navigate through "landmark" decisions and I could always be completely honest with you about my feelings and concerns. I loved that you would be honest with me and your thoughts about the direction I was taking my life...because that's what a real friend does. You and your family were a part of those "big" events in my life and that always meant a lot to me.
You treated me as if I was family and in return I viewed you as mine. It was always a pleasure to be a part of your family and involved in your lives. You trusted me with your greatest treasures which in result became my treasures.
As years went by we didn't get to spend as much time together because of distance and the craziness of life. When time came and I could spend time with you and the family, it saddened me to see that you had changed in a drastic way. Perhaps it wasn't just you who had changed but I had also changed or I guess you could say I "grew up".
It was rather disconcerting to me as I watched as our friendship diminished and became a thing of the past. I realized that we were totally different people with as opposite views as you can have on almost EVERY topic possible. The only thing we agreed on was your how wonderful your family was.
How we ended our friendship broke my heart, I still can't believe the words you said to me. The hurtful and hateful things that you said to me are the words you would say to an enemy. I guess that's what I had become to you.
After these many years, I'm over you and our friendship. I realize now that you were mostly a bully and that the real problem was that you didn't like the adult I became...you know...with thoughts, feelings and a husband. Looking back on those early days and what I thought was advice was really just pushy ways to get what you wanted.
I guess the part that hurts the most is the abruptness of it all and the irrational manor that it came about. Also, in all reality it's not even you I miss but the idea of our friendship that we had. The pain you caused me wasn't the severing of our friendship but separating me from your family. That is really saddest part and I think you knew that...actually, I know you knew that. You wanted to hurt me and that is how you did it-removing me from their lives.
Well, congratulations old friend you succeeded, I miss them more than words can say. I wish I could see them or talk to them but memories will just have to do.
I hold hardly any hard feelings towards you anymore and in all seriousness I hope you are well and happy, not for you but for them.
